Risks Related to Suppliers and Risk Management in Food Supply during Disaster Preparedness and Response Phases

Abstract

This paper examines past studies using the bibliometric literature analysis method. This research aims to gather studies focusing on risks concerning suppliers in food supply and risk management in food supply before and after disasters in meaningful clusters and examine them in detail. In addition, it was aimed to determine the direct or indirect risks related to suppliers in food supply before and after disasters. The results of the research indicates that past studies mostly focus on the risks concerning suppliers in the general food supply chain before and after disasters. These risks are addressed in the first cluster. The second and third clusters focus on the risks related to suppliers in the sustainable and green food supply chain in disasters and the risks related to suppliers in the agricultural food supply chain in disasters, respectively. This research have also determined the main direct or indirect risks concerning suppliers in food supply chain before and after disasters. Accordingly, the most frequent risks are supplier quality risk, quantity risk, delivery risk, operational risk, bankruptcy risk, supplier-related transportation and logistics error risk, supplier’s risk of skilled employee shortage, risks arising from supplier’s production and quality system failures, internal activity risk, and the risk of errors occurring in the supplier’s information technologies.

Afetlere Hazırlık ve Müdahale Aşamalarında Gıda Tedarikinde Tedarikçilerle İlgili Riskler ve Risk Yönetimi

Abstract

Bu araştırmada bibliyometrik literatür analizi yöntemiyle geçmiş çalışmalar incelenmiştir. Literatür analizi ile afetlerde gıda tedarikinde tedarikçilerle ilgili riskler ve risk yönetimine ilişkin çalışmaların anlamlı kümelerde toplanması ve detaylı olarak incelenmesi hedeflenmiştir. Ayrıca, yapılan inceleme sonucunda afetlerde gıda tedarikinde tedarikçilerle ilgili doğrudan veya dolaylı risklerin belirlenmesi amaçlanmıştır. Araştırmanın sonuçları geçmiş çalışmaların en çok birinci kümede ele alınan afetlerde genel gıda tedarik zincirindeki tedarikçilerle ilgili riskler konusuna odaklandığını göstermektedir. Bu konuyu sırasıyla ikinci ve üçüncü kümenin ana odak noktaları olan afetlerde sürdürülebilir ve yeşil gıda tedarik zincirindeki tedarikçilerle ilgili riskler ve tarımsal gıda tedarik zincirindeki tedarikçilerle ilgili riskler konuları takip etmektedir. İncelenen çalışmalarda tedarikçilerle ilgili doğrudan veya dolaylı başlıca risklerin tedarikçi kalitesi riski, tedarik edilebilecek miktar riski, teslimat riski, operasyonel risk, iflas riski, tedarikçi kaynaklı ulaştırma ve lojistik hatası riski, tedarikçinin yetenekli çalışan kıtlığı riski, tedarikçinin üretim ve kalite sistemi arızalarından kaynaklanan riskler, iç faaliyet riski, tedarikçinin bilgi teknolojilerinde hata ortaya çıkma riski olduğu görülmektedir.
